With only 26 seats, each service feels personal and unhurried. Guests gather around seasonal ingredients, thoughtful technique and warm, attentive hospitality — all framed by expansive sea views and the soft evening glow of Portals Nous.

Whenever possible, all of our fresh dishes are made with organic and local products, sourced from well-known suppliers from the area. At the same time, our fine dining restaurant’s wine and champagne cellar has an extensive array of bottles across two floors. It is arguably one of the most extensive and well stocked on the entire island of Mallorca.

At Collins Restaurant, fine dining begins with fire. Our kitchen is built around OFYR open-flame grills, birch wood embers and a philosophy of honesty, origin and respect for the ingredient. Expect seasonal vegetables from local Mallorcan farmers, dry-aged meats from Galicia, Ireland and Australia, select seafood from the Mediterranean and Galician coasts, and wild fish from the Balearic Islands, always sourced according to season and sea.

Collins restaurant in Portals Nous is a seafood restaurant where flavor is allowed to speak — slowly, deeply, without rush. To accompany, our curated wine selection ranges from local terroir to rare limited editions, including bottles of which fewer than 1,000 exist in the world.
